This is a really simple, really hearty, really tasty dish. Perfect for cold winter days!
4 pounds chuck roast (I usually buy more like 2 - 3 lbs)
salt and pepper to taste (I use kosher salt)
1 packet dry onion soup mix (I use Lipton Beefy Onion)
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped
DIRECTIONS I changed their instructions up a little because mine work better. 
Take the chuck roast and season with salt and pepper on both sides of the meat. Then, use your hand to pat it down so it sticks to the meat a little better.
Brown on all sides in a large skillet over med-high heat. Brown well enough that the outside looks pretty done and will help keep the juices in, but not so much that you'll end up with tough spots.
I do mean ALL sides. Hold it in place with tongs while the skinny sides brown.
While the flat sides are going, add the soup mix and water to the slow cooker and stir around a bit. Then, place the browned meat in the bottom of the cooker. Smother with minced garlic.
Then, add your potatos - they are best when they cook in the juices/soup water.
Then, throw in your onions, celery and carrots.
Cover and cook on low setting for 8 to 10 hours. Popsugar, do some laundry, Popsugar, vacuum some rooms, Popsugar, paint your nails, Popsugar, um...play with the kids
can't believe I left that out the first time around, Popsugar...
If I only have time to cook it for 8 hours, I do the last half hour on high.
Voila! Not so pretty. Veeeery tasty.
Once I get all the meat and veggies out (By the way, if you use this recipe and figure out how to remove the entire chunk of meat at once, let me know how! It's so tender, it falls apart so easily.
), I strain the juices into a hot pan.It helps to have two pairs of hands for this step. Thanks, hubbin.
Then, I reduce on med heat for a while. Eventually stir some Wondra flour in, and you're good to go!

into my favorites! i will make it this weekend maybe. i have been having some issues with pot roast lately and it being too tough. so the onion soup at the bottom under the roast looks like dip?

2It kinda looks that way in the picture, but no. It is fairly thick since you're only mixing one cup of water in with the packet. But, it's still soupy. I use Lipton Beefy Onion. Shizz, I should edit that.
And I forgot to put this in as a recipe.

Ooooo, we love slow cooked pot roast. We usually cook ours with a healthy dose of Merlot; it gives a really lovely flavor.

Mmm...I love roasts. Since I got married, most of mine end up turning into pulled pork or bbq beef thanks to hubby though! lol
28I don't know, SPM. I like that the meat and the potatos are essentially boiling in the juices and the vegetables are mostly getting steamed. But, I haven't tried it the other way...

it really did fall apart which is the best thing to happen with pot roast. this is the first time i have been able to make pot roast were it didn't turn out tough. i definitely will be making this more often.
