I tried this recipe last week, converting one from allrecipes.com into something I would actually eat, and here's what I came up with! For those of you who like asparagus and red pepper, this is absolutely delicious! I made sandwiches both on Saturday and Sunday - couldn't help myself!
1 bunch fresh asparagus, trimmed
1 red bell pepper, seeded and quartered
1 tablespoon olive oil
3 hoagie rolls (On Sunday we were out of rolls, so I just used bread and made a sandwich.)
6 ounces shredded cheese (I used feta and mozzarella. Recipe recommended Swiss.)
2 tablespoons lemon juice
1 teaspoon minced garlic
2 tablespoons Caesar dressing
*Mayo can be substituted for Caesar dressing; Tomato slices are another potential addition to the sandwich (Just not mine!)
Directions
Preheat oven to 350 degrees F (175 degrees C).
Toss asparagus and red pepper with olive oil. Place on a lined baking sheet and bake until tender, about 10 minutes. Once cool enough to handle, remove skin from the pepper and slice into strips.
Cut hoagie rolls in half, place on a baking sheet, and toast lightly in the oven. Remove rolls from the oven and sprinkle each half with cheese. Place 4 to 5 asparagus spears and a few strips of pepper on one side. Place slices of tomato on the other side of the roll. Place the hoagies back in the oven until the cheese is melted, about 5 minutes.
Meanwhile, in a separate bowl, mix the dressing, lemon juice, and garlic together. Spread the mixture on one side of the roll and close sandwich.

2Aud- have you had it cooked correctly?? Its similar in acidty to broccoli so usually if you like broccoli you like asparagus. *oddly enough*
3yes and i love broccoli but i just find asparagus too bitter.
4Try it drizzled with EVOO, fresh squeeze of lemon, and kosher salt and pepper. Roast it in an oven at 500 degrees for 4 minutes.
