Another recipe from my boyfriend's mother
INGREDIENTS
2 slices bacon
1 medium onion chopped
1 lb. ranch steak or round steak cut in cubes About 1-2 inches in size
1/4 c. flour
2-3 cloves of garlic chopped
1/2 tsp. crushed caraway seed
1 tbsp. Hungarian paprika
1 can beef broth (about 2 cups)
1 green pepper chopped
2 chopped tomatoes
4 small potatoes peeled and chopped
1/2 c. sour cream
Cooked noodles
Chop up bacon and cook over med. heat until it has released it's fat. Remove from pan and reserve. Add the onion and sauté lightly but do not brown.
Lightly dredge the meat in flour and shake off excess.
When onion is translucent add the meat stir and then cover browning lightly with the lid on.
After meat is lightly browned add the garlic, caraway seed, paprika and beef broth. Cover and simmer for about an hour.
Add the gr. pepper, tomatoes and potatoes, cover and
cook until vegetables are tender.
Just before serving temper the sour cream by adding a little of the hot goulash to it then stir all of it into the goulash.
Serve over noodles. Sprinkle with reserved bacon.

mmmmm sounds really good. One question -- what is Hungarian paprika and what is the difference between it and regular paprika?

Most commercial paprika comes from Spain, South America, California and Hungary. Hungarian paprika is thought to be the finest, and will be labelled as from the Szeged region. In Hungary there are six classes or types of paprika ranging from delicate to hot. To maintain the stronger taste that consumers expect, some spice companies add cayenne to heat up Hungarian paprika. Source
So I guess it's just better quality. I guess it wouldn't be the end of the world if we used regular paprika.

4Heh, I always make this with an entire container of sour cream. I love my dairy. This sounds reeeeeally good right now. Methinks I'll have to thaw some stuff out for tomorrow.
