I made my dad chocolate pudding this weekend because he has been eating so much Jello pudding lately that I thought it was time to treat him with the real thing. This pudding is simple to make, especially if you have experience making custards or ice creams as it follows a similar technique. The pudding is rich and thick, mousse-like. I watched Ina Garten make it on Saturday and then I attempted in my own kitchen later that day.
Chocolate Pudding
From Ina Garten
6 extra-large egg yolks
1/2 cup sugar
1/4 cup cornstarch
3 tablespoons very good cocoa powder
Pinch salt
2 cups milk
1-ounce very good semisweet chocolate, chopped
2 tablespoons unsalted butter
1 1/2 teaspoons pure vanilla extract
2 tablespoons heavy cream
- Beat the egg yolks and sugar until light yellow and thick in the bowl of an electric mixer fitted with the paddle attachment, on medium-high speed.
- On low speed, add the cornstarch, cocoa powder, and salt.
- Bring the milk to a boil in a medium saucepan and, with the mixer on low, slowly pour the hot milk into the chocolate mixture.
- Combine well, then pour the mixture back into the pan.
- Cook the mixture over low heat, stirring constantly with a whisk or wooden spoon, until thickened. If the mixture begins to curdle, remove it from the heat and beat it vigorously with a wire whisk.
- Remove the pan from the heat, add the chocolate, butter, vanilla, and heavy cream, and mix until the chocolate and butter are melted.
- Pour into serving bowls. Place plastic wrap directly on the top of the pudding, and chill thoroughly.

and am so making this.
2I lived on pudding, Jello, Gatorade, and Ensure for almost three weeks before I had surgery. Haven't been able to touch any of it since. Which is a shame, because even I have to admit that looks good.
3Oh wow! It never even occurred to me that you could *make* pudding without the jello box.
I always feel like I'm going all out when I do the not-instant box.

6it probably taste SO much better than JELLO pudding. Every time I make pudding from the box I always taste chunks of the powder in my mouth.
7do you think i could use splenda instead of sugar.. my dad is diabetic, but would love some of this chocolaty goodness!
