original recipe

I'll be honest, I don't measure when I cook this, but it is DELICIOUS! It's so easy and so tasty, you could entertain with this and it's such a snap to make. I normally make this with just ground dry ginger, but last time I was at my parents making this and they had a HUGE jar of fresh ginger in the fridge, either way is great though!


INGREDIENTS

2 lbs Snapper
1 stick softened butter
1 jar macadamia nuts
Ginger to your liking (either fresh or ground)
Salt
Pepper

DIRECTIONS

1. Pre-heat oven to 450 F
2. Crush or chop the macadamia nuts until they are about the size of peanut halves.
3. Mix nuts, softened butter and ginger together in a bowl. (I use a lot of ginger, about 1/3 cup fresh and about a 3 - 4 Tbsp ground, but it depends on your liking, I just keep adding till it smells gingery enough for me)
4. Place Snapper in a baking dish, skin side down and season with salt and pepper.
5. Coat the snapper with the butter nut mixture.
6. Bake for 25-30 minutes or until fish flakes.
