Don't you hate spending money for wonderful, fresh herbs, using just a few sprigs... and then pulling them out of the fridge a few days later, only to discover that they're now a browned out or mushy mess.
Here's a trick that really works! After I use what I need initially, I trim them down to the useable parts. Then dry these nice fresh herbs by wrapping them loosely in cheesecloth and just leaving them on a shelf in the fridge for about 7-10 days.
The fridge dries them out, but they retain their nice color and fresh flavor. When they're dried, I just crumble with my hands and store them in my spice jars.
I have a bumper crop of herbs growing in a strawberry pot at home... whenever they need to be thinned out, I just start drying! My spice jars are always full and I'm happily cooking with my own "homegrown" herbs... How spoiled am I!
All you need is a bit of cheesecloth - and your fridge, to dry fresh herbs!
