In the spirit of trying to get the most out of herbs and spices... here's another trick I recently learned. When peeling fresh ginger, use a spoon! It easily removes the thin outer layer of peel, and lets you get into all those little nooks and crannies. You won't waste even one fragrant, flavorful bit!
