Pumpkin Cake/Bars
2 Cups white sugar
4 Eggs
1 Cup of oil
1 teaspoon vanilla
Mix first 4 ingredients well
Blend in 2 cups pumpkin
Sift together the following ingredients:
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon salt
Sift into pumpkin mixture, and mix together thoroughly
Grease and flour either a 9X13 Baking pan or Jelly roll pan(for bar type)
Spread batter evenly into pan
Bake at 350 degrees or until done (9X13 pan will take a little longer)
Icing
1 250 gram package of cream cheese
1 teaspoon vanilla
1/2 cup margerine or butter
2 cups icing sugar
Combine ingredients and blend well
Spread over cooled pumpkin cake

1YUM. I love pumpkin cake. I have a very similar recipe where you make the cake in a jelly pan and then roll it into a "pumpkin roll" like a giant swiss cake roll. Always a hit.
