What can I say? I like to keep things simple. If you only have a few ingredients and nothing to prep, it's easy to get the slow cooker ready before you leave for work.
1 chicken (around 4 to 4 1/2 lbs.)
1 large can enchilada sauce (or small can if you don't want extra)
1 can diced green chilis OR jalapenos
Pull the insides out and rinse the chicken. Put it in the slow cooker and add the enchilada sauce and chilis, and cook on LOW for 6-8 hours. If you want a smooth sauce with no chili pieces, stuff them into the chicken instead of mixing them into the sauce. Debone the chicken and mix the meat back into the sauce after cooking. Serve on tortillas or with rice.

8I love crock pots. I have a little one since it is just me. It holds about two large chicken breasts or a smaller pot roast. I love it because I can meat fully cooked in three hours without any effort. Im definitely am going to try this recipe! This would be great chicken to use in enchiladas!

11I was watching a show where they made fajitas in a crock pot. Placed the bell peppers and slices of meat (could do chicken) in the crock pot with some beer and slow cooked away. Ive been wanting to try but I need someone to buy beer for me- damn the drinking age being 21
