I have had much success with this recipe! I had tried making peanut brittle the traditional way but was either too impatient or inexperienced to produce anything other than very dark candy with burned peanuts - yuck!
I may sound a little unconventional, but it works and it is fast…so fast in fact, I once made 15 batches on a continuous cycle of zapping and cleaning.
As it is with all simple recipes, the quality of the ingredients is paramount. I use fresh butter, Pure Vanilla Extract (like the Madagascar Bourbon Kind,) and a fresh box of baking soda.
I usually make peanut brittle, but you can use whatever nuts you like.
Equipment:
I cool my brittle on a marble slab I picked up at IKEA for under $20.00. It is perfect. I butter it, and it is a snap to clean and leaves the underside of the candy smooth. The only caveat is if you are doing rotating batches, if the marble isn't allowed to cool between batches it may cause a slight problem.
If you don't have a marble slab you can use a buttered silicone baking mat or a flipped jelly roll pan foil covered and buttered.
Cooking time will vary with the power of your microwave. I have a very common oven and I use the mid range of the cooking times.
I use a Pyrex 8" square pan for this recipe. You cannot use even microwave safe plastic IT WILL MELT!
A silicon spatula is a great asset, but a wood spoon works just as well.
You will need:
1 1/2 Cups Unsalted Shelled Roasted Peanuts (or other unsalted nut)
1 Cup white granulated sugar
1/8 tsp. salt (omit if using salted butter)
1 Cup light corn syrup
1 Tbs. Butter (Unsalted or Salted - see above)
1 tsp. Pure Vanilla Extract
1 tsp. baking soda
To prepare:
Mix peanuts, sugar, salt, and corn syrup in microwave safe dish. Cook on HIGH for 7-9 minutes.
While in microwave prepare surface for cooling by buttering the surface of your choice (marble, silicone baking mat, or jelly roll pan.)
Remove dish from oven with mitt (it will he extremely hot!) Mix in vanilla and butter. Cook on HIGH an additional 2-3 minutes.
Remove with mitt and stir in baking soda until foamy.
Carefully pour onto prepared surface.
Cool. Crack. Enjoy!

3Sounds great and SO easy. Too bad Brandon burned up my microwave over the weekend. Darn kiddos.

5haha. Well, I was taking a nap and hubby was watching the kids (you know how that goes...) Apparently Brandon (who is only 4) decided he wanted some oatmeal. He got the bowl out of the cabinet, poured the oatmeal into it, and mixed it with water. Then, he got a spoon and stirred it. He put it in the microwave for like 15 mins and left the spoon in it. Jason (hubs) smelled smoke, and went to check, and the whole inside of the microwave was on fire. It still smells like burnt plastic in the kitchen, lol And my 5 year old is mad at my 4 year old still, because Brandon destroyed his most favorite bowl in the entire world! lol

11It is funny now..was scary then! lol Good thing we just replaced our fire extinguisher earlier this year. Now we need a new one, so I hope there's no more incidents until we can pick one up.

13I know, I couldn't imagine waking up to smelly smoke with three kids in the house! One time when I was 4, I was playing with matches i nthe kitchen while mom and dad were asleep. The flame hit my fingers and I let go of it, and the match fell in the trash. Before you know it, the trash is on fire, it spreads onto the wall behind it. My dad running out in his whities, extinguishes it with a huge pot of water.

17Do the kids now know how to use the microwave? Mine has a add 1 minute button which is great cause my nieces love making the popcorn themselves when they come over. I tell them, "Hit the add 1 minute button 3 times." So cute!
18I let them make popcorn, because all they have to do is press the button with popcorn on it. I'll let Jake make toast or waffles in the toaster, but they do all of that with supervision. They also help me cook all the time, so I guess I should be glad it wasn't the oven he caught on fire! lol Brandon thinks he's an adult and can do anything me or Jason can do though.
19Well I think it's a great thing that you're teaching them responsibility in the kitchen. It gives them a respect for the appliances. Thank GOD it wasn't the oven!
20Heehee, I set a trash can on fire once as a kid. Despite all the PSAs warning us not to, we played with matches. No one was home with us (we were latchkey kids), so we just ran the can out into the backyard and doused it with the hose! The liner melted, so we just threw it away and hoped our parents wouldn't notice the scorch marks. They didn't, whew!
21I've always been curious about microwave peanut brittle (only tried to make once, stovetop, kind of a failure), but am super 'noid because my microwave is SUPER HOT (caps necessary). I guess I should just accept that it will take some trial runs.
