Chicken & Broccoli Alfredo

I totally broke my diet tonight with this one, but it was SO worth it.

4 chicken thighs
A few cups of water and a couple tablespoons of chicken boullion (Enough to make stock for poaching the chicken.)

1/2 bag frozen chopped broccoli
1 box of pasta noodles (whatever you like best)

Sauce:
1 1/2 sticks of butter
2 tablespoons flour
2 cups heavy cream
1 1/4 cups Parmesan cheese
Salt and pepper to taste

Get three pans out. Boil water for the pasta in one, put the stock and chicken thighs in the other, and the third is for the sauce.

While the chicken and pasta water do their thing, melt the butter and whisk in the flour. Add the cream and cheese, and stir until the cheese melts. Salt and pepper to taste. Do not boil.

When the chicken is cooked, put it in a bowl to cool while the pasta finishes cooking. It helps speed things along if you tear the meat on the thighs in half. Put the broccoli in the microwave, strain the pasta, and pour the broccoli into it. Turn off the heat on the sauce. Shred the chicken and dump the broccoli and chicken into the pasta. I don't add the sauce to the broccoli/pasta/chicken mixture because everyone I feed likes different amounts of sauce, but do what floats your boat.

Since you're already going to have a stroke just from the sight of this pasta sauce, you might as well top the dish with another handful of Parmesan cheese. Eye-wink
