Since moving to Norway, I've been experimenting with open face sandwiches (called smørbrød in Norwegian - which means butter bread). They really are a staple over here. People eat them for breakfast, lunch and at night before going to bed. I normally like to keep mine really simple and the ingredients to a minimum.
Here are a few of my favorites.
Snøfrisk and Red Bell Pepper - The sweetness of the pepper goes really well with this spreadable goat cheese. Add some black pepper and you've got a delicious and healty sandwich.
Snøfrisk - Norwegian spreadable cheese made with goat milk. It's a bit like cream cheese but a lot better. I know they sell it in Canada, so they might sell it in the USA as well.
Roast Beef, Jarlsberg and Swedish Mustard - It's my own twist on the classic steak and cheese sandwich. The sweetness of the mustard goes really well with the beef and the Jarlsberg, which is a bit like Emmental but with a milder taste.
Egg Salad and Smoked Salmon - Surprisingly delicious! Just make a simple egg salad with hard boiled eggs and mayo and layer some smoked salmon slices on top.
Nordic Shrimps, Mayo and Lemon/Lime - Maybe a bit too simple, but you can't beat the taste.
Hot Smoked Salmon and Green Apple - It may sound weird, but this one is so delicious. Mix together some hot smoked salmon, dices of green apple, crème fraîche and pepper. Spread and eat. The tartness of the apple helps balance the smokiness of the fish.
This is what hot smoked salmon look like - Unlike normal cold smoked salmon, the fish is cooked but still has that delicious smoky taste.
Ranch Dressing, Swiss Cheese, Ham and Cucumber - This one is inspired by the best sandwich that was sold at my High School's cafeteria when I was an exchange student in Germany. You could also find it in bakeries and snack shops across the country.

Thanks for posting these, Finn. Hot smoked salmon is one of my favorites. I like to mix it in with scrambled eggs.

9smoked tuna and eggsalad huh! Never would have thought. I love openfaced sandwiches too. Got that from my German mother.
10When I saw open face sandwich I thought it was going to be some type of meat and gravy. These open face look and sound interesting. May have to try one of these.

12wren, Snøfrisk is so good. I put some in the béchamel sauce I made last night for a broccoli and cauliflower gratin and it was awesome. I think they had it at Costco in Canada.
13I was going to make the smoked salmon one for lunch today but someone ate the last apple.
