These cookies are a healthy snack for any occasion (but are very nice for the holidays - because of the spices used). They are mainly made with the leftover pulp from a juicer.
INGREDIENTS
2 eggs
2 c. pulp (apple, grapefruit, orange, carrot, pear, etc...)
2 c. sugar
2 tbsp. butter
2 c. chopped nuts (pecans & walnuts work nicely)
2 tsp. baking soda
2 tsp. salt
4 c. flour
1 tsp. each of cloves, nutmeg and cinnamon
2 c. raisins or currants
Mix all ingredients together in a large bowl. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes or until golden brown. Makes 5 dozen.
