This recipe is easy, always comes out moist, and is tasty! It makes 2 loaves and freezes well.
This was the first blog I did when I signed up for Sugar. I didn't belong to any groups then, and also recently remade it, so I thought I'd repost it, now that I belong to KG, in time for fall 
INGREDIENTS
2 cup canned pumpkin
3 cup sugar
1 cup vegetable oil
2/3 cup water
4 eggs
3.5 cup flour
2 Tbsp baking soda*
1.5 Tbsp salt
1 Tbsp cinnamon
1 Tbsp Nutmeg
1/2 Tbsp ginger powder
Preheat oven at 350.
Grease and flour two 9x5 or 8x4 loaf pans. Blend first 5 ingredients (pumpkin, sugar, oil, water, eggs) and beat for 1 minute on medium.
Add remaining ingredients (flour, baking soda, salt, cinnamon, nutmeg, ginger) and blend on low speed until moistened. Then beat for one minute on medium speed.
*NOTE: Make sure to sprinkle baking soda evenly when you add it to the batter.
Pour into pans, and bake 60-70 minutes.

Let cool for 5 minutes and remove from pan.

11Finn- You can make some pumpkin stuff!!! PW has a recipe that is so easy to make. I will be trying it to make pumpkin pie and now this bread. As long as you can get pumpkins where you are, I guess that would help huh?

21OK.. so I bought all of the ingredients, made this, and it was a total flop I had to throw it away
Your recipe says 1.5 TBSP salt which I thought was waaaay too much but I also thought how the heck could that be copied wrong.. so I used it and it was way salty
What a bummer I was sooo looking forward to this!
Anyway I woke up this morning and made the pumpkin bread from one of my cookbooks so all is well in the universe
Did you mean 1.5 tsp?
22That's weird, Karma. I used 1 Tbsp. as directed, and it was fine. And, I don't ever salt ANYTHING, so if stuff is even remotely salty, I pick up on it and do not like.

It was moist and I could tell it would be awesome minus the salty taste.. my dad tried it and we both agreed it had to be throw out
But I will say I've never used to much salt in any baking recipe before

25I just looked, and the recipe does say Tbsp. I've made this so many times and have never had a problem. I'll make it again next week to check into that. (maybe I've been using tsp instead of Tbsp??) I'm sorry it didn't work out for you. What a bummer

26I know right.. I was all excited for this dern pumpkin bread too!!!
How odd.. Well we don't have a hand mixer anymore (it was a UK mixer so they left it in London) so I just mixed it by hand.. but I know I measured the salt amount correctly and made sure it was mixed in well
Who knows, must be one of those weird thing!

28Yeah.. but since you've made this so much I'm sure you know that it actually is 1.5 TBSP.. I wish I could figure out what went wrong though because I want to make this recipe.. grrr.
