If you like gingerbread you will love these muffins. Very moist!
Ginger Molasses Muffins
Preheat oven to 395
2 3/4 cup white flour
2 1/2 tsp baking soda mixed with 2 tbsp olive oil
1tsp cinnamon
1 tbsp ginger
1/2 cup margarine
1/2 cup +2 tbsp brown sugar
2 eggs
3/4 cup molasses
1 1/3 cup sour milk ( milk with tsp of vinegar)
Mix ingredients together pour into muffin cups 3/4 almost full.
Bake at 395 (my oven has been a little off lately so you may want to decrease the temperature) for 20-25 minutes
If you like lemon, a mixture of lemon and icing sugar can be created to drizzle on top of each muffin when taken out of the oven.
