we usually make soup or use it as sandwich meat.
1I make turkey sandwiches, LOVE them! Sometimes I shred it and put it in pasta too!

It sounds weird, I know, but "Day After Thanksgiving" sandwiches are sooooo good.
7When I do the past thing, I do it the deadly way, LOL! With leftover turkey gravy, pasta, shredded turkey meat.
Alfredo would be yummy too!
8Turkey sammitches. This year, I have some of a friend's delicious gingered pear-cranberry sauce to put on a sammy, but I also want to try the turkey potato soup.
9Sandwiches. & I stole the idea from Friends to put a "moistmaker" inside...
10Sandwiches, soup, and a little bit gets shredded up for the dogs.

Or I'll use it in stir fry. I know it's not exactly the most traditional, but it works for me.
12God I love Thanksgiving leftovers. I will eat them for a week straight. I don't do anything with it. I eat it alongside leftover mashed potatoes or sweet potatoes, cranberries, greenbean casserole, stuffing, and this orange jello stuff my mom makes every year. Yummy.
13well i am doing a fresh already brined turkey from traders joes.
a) never made a fresh turkey before and b) never brined one either. hope its good

1 sheet frozen puff pastry
2 cups leftover mashed potatoes
4 cups turkey, shredded
1 tablespoon chili powder
1/4 cup parsley, chopped
1/4 cup cilantro, chopped
Salt and freshly ground black pepper
1 egg
All-purpose flour for dusting
Pre-heat the oven to 400°F.
Pull one sheet of puff pastry out of the freezer and thaw it out in the refrigerator for about 30 minutes.
While the puff pastry is defrosting, make the filling. In a mixing bowl, combine the leftover mashed potatoes, shredded turkey, chili powder, parsley, cilantro, salt and freshly ground black pepper.
Once the dough has defrosted, use a little flour to roll out the dough to about 1/8 of an inch thick and cut it in half horizontally. Cut each half vertically into three equal pieces; you should have six squares. Place 1/3 cup of the potato mixture in the middle of each square.
Fold over each square so one corner meets the other. It should look like a triangle. Press the sides down using a fork or pinch with your fingers. Repeat with the other five. Lay them out onto a parchment-lined sheet tray. Beat an egg in a bowl with a tablespoon or so of water. Brush empanadas with the egg wash so they will get nice and brown.
Transfer to the oven and bake for 10-15 minutes, until golden.
24TURKEY CROQUETTES
2 1/2 c. ground cooked turkey
2 tbsp. melted butter
2 tbsp. chopped parsley
1 tbsp. minced onion
1/8 tsp. sage
Salt
1 egg
1 tbsp. water
1/4 c. flour
1/2 c. dried bread crumbs
Salad oil
In a medium bowl, blend first 5 ingredients. Add salt to taste. Cover and chill several hours. 30 minutes before serving, shape mixture into 8 cones. In shallow dish, beat egg with water. Place flour and bread crumbs on separate sheets of wax paper. Coat each croquette first in flour, then in egg, then in crumbs. In 4 quart sauce pan, over medium heat, heat oil; fry croquettes, turning until golden brown. Drain on paper towels. Serves 4.

2 tablespoons vegetable or any light colored oil, plus some for frying
1 stalk celery, finely chopped
1 small onion, finely chopped
1 carrot, peeled and finely chopped
1/4 cup chopped parsley
1 pound leftover sliced turkey
1 1/2 cup leftover mashed potatoes
1 1/2 cup plain breadcrumbs, divided
1 teaspoon poultry seasoning
A few pinches whole nutmeg
Salt and freshly ground black pepper
1 egg, beaten
Cranberry sauce
Gravy

Preparation
Heat 2 tablespoons of oil in a skillet over medium-high heat. Add the celery, onion, carrot and parsley, and cook until softened, about 5 minutes. Let cool slightly.
Heat a 1/4 of an inch of oil in a large skillet with high sides over medium-high heat.
In a mixing bowl, shred the leftover turkey using two forks. Add the mashed potatoes, 1/2 cup of the breadcrumbs, poultry seasoning, nutmeg, salt, pepper, egg and cooled veggies. Mix to combine and form 10 patties about an inch thick.
Dredge the patties in the remaining breadcrumbs and brown in two batches in a single layer in the hot oil for 2 minutes on each side or until deep golden brown. Drain on paper towels and transfer to a serving plate. Serve with cranberry sauce and gravy alongside.
