This weekend my friend April was having an appetizer potluck birthday party in the park. I wasn't sure what I was going to make, so I got up early and went to the farmer's market to see if I could find something that inspired me. I ended up getting sidetracked on my way to the market and ended up not having too much time. So I needed to find something quick and simple to make. I ended up picking up a pound of dates (medjools & derries, I currently prefer the derries) and some fresh creamy goat cheese (made that morning even). I then went home, pitted the dates (you take a paring knife, slice them open vertically and use the tip of the blade to pop them out) and then stuffed them with the goat cream cheese (which was actually thinner than regular cream cheese, but not as thin as sour cream). I then toasted up some chopped walnuts and sprinkled them on top of the cream cheese (I kinda wish I had mixed them in instead) and then I cracked fresh black pepper on top of the whole thing. Super simple and super nice, I actually ate three (or maybe four...) on my walk to the park.
