I have a green chile chicken enchilada recipe that I
posted on here way back. Let me find it.

Anaheim chiles are the same thing (if they don't have any frozen gc) but they tend to be
super mild.
6There is always chicken tortilla soup
I don't have a specific recipe but chili relleno is always good or really any sort of stuffed pepper. Carne asada is always a hit with me. Im sure there is somewhere in Philly that sells it. You can get it already marinated and just throw it on the grill and it is cooked up in minutes.
7Here's my only Mexican recipe:
1.5 C lime juice
fill blender with ice and pour in lime juice.
Add:
1C Tequila
1/3 C cointreu
1/3 c sugar.
Blend and drink
81 can of frozen Lime/limeade
a little Triple Sec
Tequila (usually just fill the empty juice can)
mix together in a pitcher and fill the rest with water or blend in a blender with ice. Total poor mans quick margaritas!

9You can't go wrong w/ enchiladas. Make sure you have rice & beans too.
10Oh & I make my enchiladas the same as Coco's recipe except for the sauce i melt some velveeta w/ some salsa & pour on top.
If you don't want something so heavy on top, but still want melted cheese somewhere..You can buy some spicy pork sausage (like Jimmy Dean), brown sausage & mix with velveeta & a can of rotel chiles. Serve with tortilla chips.
11Here is how I make my enchiladas
I like to cook a bunch of chicken up ahead of time. Either boil it or cook in a slow cooker and then I shred it.I like to throw in a can or two of diced Ortega green chilies with the chicken. You can always add spices too like cumin and chili powder and also cheese. Then I warm up tortillas in the microwave, fill with the chicken mixture, roll and stick in a baking dish. Once the dish is full I cover in green enchilada sauce and put plenty of cheese on top. I also like to top with black olives but that just a personal preference. I place in a preheated 350 degree oven and cook until the cheese is nicely melted usually 20-30 min. Take them out and let them sit for a little bit and then serve.
You can always do pork, shredded beef or all cheese fillings also
12If you want to cheat you can get a rotisserie chicken from the grocery store....It makes yummy enchiladas.
13Whoever invented the grocery store rotisserie chicken should be given a Noble Peace Prize. It makes life so easy. I also like to grill up a bunch of chicken on my George Foreman grill and keep it in the freezer so I always have grilled chicken whenever I make meals like enchiladas
14You should definitely have chips and salsa - but don't use picante. I have a very easy recipe for salsa that I make all the time:
I have a little chopper that I throw all of the ingredients in. If you don't have a chopper, you can use a blender, but chop all the veggies down a bit first.
1 can whole tomatoes
half a white or yellow onion
1 or 2 cloves of garlic - crushed and chopped
cilantro to taste (I only use a pinch)
1 or 2 large fresh jalepenos - (depending on the level of heat you're looking for)
and if you want to be adventurous add a serreno pepper. It adds such a great flavor.
Salt helps to bring out the flavors so add a dash or two.
Blend in the chopper until it's at the consistency you like and chill.
15There are a million ways to make tacos. Soft, crunchy. Turkey, pork, black bean, avocado, steak, even duck with feta is good. Lettuce and cheese, or cilantro, onion, and tomato. You know me and tacos, so that's my vote. It's super easy to cut up a bunch of stuff, cook some meat and black beans (season them the same way), and lay out a build your own taco bar.
Failing that- tamales, tostadas, giant burritos with enchilada sauce, chile rillenos, taquitos, or quesadillas.
16Tamales are my ultimate food. I LOVE them!!! I would ask around and see if you can find a place that handmakes tamales. Cheese and green chile and shredded pork are my faves. That is the one thing I LOVE about living in SoCal- there are always small hole in the wall places that make the best Mexican food.

21whip this is easy and a huge hit.. i just made it over the weekend
22get a pretty nice size cookie tray and spray it with pam then spread out a bag of tostitos, evenly spread out a can or two of bean chili, a jar of salsa and tons and tons of jalopenos if u like them then cover genrously with mexican mix cheese and broil until bubbly and toasted .. then serve with sour cream and guac.. it was a huge hit .. i put a towel down on the table and served it as is with plates and forks
I saw this taco recipe in Jonathan's Men's Health magazine the other day (hey, it was in the bathroom), and it looks freaking delicious. I can't wait to make it.

you want something fancier but dayum that stuff is so good.. tortillas, ground taco meat (we use turkey instead of beef) refried beans, tomato/salsa sauce, olives, cheese layered like a
lasagna and baked until the cheese is bubbly.. Put out shredded lettuce, onions, chopped tomato, olives, salsa, etc. in bowls and you're good to go
Or do it yourself burritos are always fun with friends.. and don't forget the tequila shots hahahaha

I like to make double decker tacos. It's the same as regular but I take softshells, spread some heated refried beans on them and wrap that around a hard shell. It's an extra step but it's worth it.

Or make your dishes with the taco meat and have black or refried or whatever beans on the side for those who want to add.

33This Chicken Salsa Verde bake is super easy and DELICIOUS. She calls for 2 bottles of salsa verde, which I think is RIDICULOUS, so I only use one. Also, you can use the rotisserie chicken in this one too instead of cooking your own chicken.

39Most the salsa in Arizona tends to be blended and not chunky! My friends really love this salsa recipe and its really simple!
1 large can whole tomatoes
1 can jalepeno's (preferably not the nacho kind and from the mexican foods aisle)
1/2 onion
2-3 cloves garlic
1 tsp lime juice
a handful of cilantro
some salt
and some pepper
You can add some cumin if you like! Then I stick it in a blender and pulse until blended! The ingredients are not exact and I edit by taste!
If you want to a be a bit more fancy instead of canned jalepenos roast some instead and if you want spicier use Habeneroes!
