In the spirit of Memorial Day weekend, I decided to make a BBQ inspired meal. Thanks to Sandra Lee, I found something quick and easy to make. Just a little warning, mine got pretty spicy! Feel free to go easy on the chili rub, or use a sweet BBQ sauce to balance the spice.

Ingredients:

4 Pork Loin Chops, ¾ to 1 inch thick (I used about the same weight of meat but with 8 thin-cut chops)
Garlic salt
Ground Black Pepper
2 Tablespoons chili seasoning (Just like what you would use to make chili( i.e. McCormick's. I used Spice Island Chipotle Chili to up the spice factor!)
½ cup or more bottled barbeque sauce (I used a chipotle flavor to complement the spice)

Preheat the Broiler. Line a baking sheet or broiler pan with foil. Place chops on the baking sheet. (I added a little cooking spray to the foil before I placed the chops to avoid any sticking).

Season with garlic salt and pepper on each side. Go easy on the garlic salt or else your meat will taste too salty. If you are worried about the salt, just use garlic powder sparingly.

Then rub each side with the chili seasoning.

Broil the chops 6 inches from the heat for 4 min per side. If you are using thin-cut chops lessen the time to 2-3 min. a side. Take them out and brush the first side of the chops with the barbeque sauce. Broil for one minute. Turn the chops over and brush the other side with additional barbeque sauce. Broil for 1 minute more, or until the pork is cooked through to 160°. Serve hot.

I accompanied the pork chops with a store bought Cole slaw salad kit and Green Chili and Cheddar mini corn muffins.

To make the corn muffins, I just use a store bought corn muffin mix. You can use your favorite, I prefer the Marie Callendar’s brand because all you need to add is water! After you make the batter, mix in one small (4 oz.) can of green chili’s and ½-¾ cup shredded cheese. Use whatever cheese you like. I used cheddar this time, but it’s also great with pepper jack, Monterey jack, Colby jack, etc… Once they were in the pan I topped them with a little cracked pepper. Bake according to the directions. I decreased the time by 5 min. for the mini muffins, but depending on your oven, you may need to just keep an eye on them!
