This is one of our favorites. Great as an appetizer or an entree - depends on the size of the chicken pieces.
Marinade:
1/4 c. mochiko
1/4 c. corn starch
1/4 c. sugar
2-3 cloves garlic, minced
1 tsp. salt
5 Tbsp. soy sauce
5 lbs chicken thighs, boneless
1 pkg sushi nori
Combine wet & dry ingredients, then add garlic. (Stirs better that way.) Cut chicken into strips.
Marinade in fridge 1 - 2 nights. Cut the nori (widthwise) into 1 1/2 inch tall strips. Wrap one nori strip around each piece of chicken. Use marinade to seal the end of the nori down.
Fry in canola oil in a large wok.
CAVEATS: These are the ingredients as they were given to me. I actually use 1 1/2 lbs breast tenders instead. Healthier, but not quite as juicy and tasty. I'm not sure its enough marinade for 5 lbs thighs, but my auntie gave me the recipe and this dish is darn good when she makes it, so I guess she knows what she's talking about. Wow, long enough sentence?
Also, I had to write the instructions out. She just wrote the ingredients down for me. This is actually really simple, but somehow I made it sound complicated. So, ask questions.
P.S. Can I tell you that I love the PINK Kitchen-aid Stand Mixer you have up? Pretty!!

Oh, forgot to mention that although this is fried in oil, since there is no breading, it absorbs very little. I never have to add more oil, so I figure its pretty healthy-ish.

10mmmm, jen, this recipe sounds yummy. e have lots of Asian markets where I live so these ingredients should be easy to find. With all these great recipes, it's going to be hard catching up!

20No I despise ALL seafood! I have no idea why, everyones always saying how good it is but I even hate watching people eat it! When we had that reception here someone brought spring rolls and I started to eat one (it was gooood) but then I got suspicious and looked and found shrimp so I had to stop eating immediately.
21My husband is the same way, Karma. He hates fish, seafood, everything from the water, hates for me to even cook it since he has to smell it! lol It kills me because I LOVE seafood! I was smart though and got the boys to like it, so he has to suffer through it every now and then...hehehe

LOL Yaya, I have only one fish recipe and its pretty good, but Mahi Mahi probably doesn't abound in Madrid, no? LOL, I'm actually not at all a fish person, either. I only even have that recipe from when a friend of ours in Hawaii went deep sea fishing and brought some back.
I do like shellfish and shrimp, though.
28LOL PPP she is cute. I love some seafood, I admit I didnt really eat it until I came to Spain. Seafood is very important here and my BF's mom taught me how to eat it LOL. Before I only ate Shrimp, Tuna, codfish and some fried fish my mom would make. Here I ate Lobster, Prawns, all kinds of fish I never knew existed. I like it more and more now

LOL! Aw, thanks Jinx. Funny story - we were on the beach in Waikiki one time in high school and this tourist lady came up to me and my friend and said that her son refused to go on vacation with him because there would be no hot chicks there. So, she was going down the beach and filming all the girls saying hi to her son. I was like, what!? Lady, your son is throwing the biggest party this side of Weird Science. Ha ha ha, still makes me laugh.
