Chopped up green and red peppers (tiny tiny chops about the same size as corn kernels), a little mayonnaise, salt, pepper, cumin,chopped cilantro, touch of lime or red vinegar if desired.
1/2 lb. white corn
1/2 lb. tomatoes
1/2 lb. fresh, cleaned shrimp
1 onion
3 tbsp. salad oil
2 tbsp. vinegar
4 tsp. water
Salt to taste
Fresh ground pepper
Pinch of sugar
1/2 c. fresh parsley, chopped
1/2 c. chives, chopped
Dice the tomatoes, with or without skin, and mix with corn. Cook, chill, and skin shrimp. Chop parsley and chives and mix with remainder of ingredients as salad dressing. Add dressing to
corn/tomato/shrimp and mix thoroughly.
You can take out the shrimp and add chicken if you like it better.
•SALAD:
•3 cups corn (cut off of cooked cobs or from cans)
•1 cucumber, peeled and cubed
•1 red bell pepper, cubed
•2-3 scallions, thinly sliced
•2 dill pickles, cubed
•fresh dill, finely chopped
•DRESSING:
•3 Tbsp. oil
•2 Tbsp. lemon juice
•1/2 tsp. mustard
•1 tsp. salt
•1/4 tsp. black pepper
Preparation:
1. Combine corn, cucumber, pepper, scallions and pickles.
2. At least 3 hours before serving, mix the dressing ingredients and pour over the salad.
3. Chill.
4. Just before serving, add dill to the salad.
Corn salad? Like a salsa to go in burritos and tacos?

4oh also- add drained corn kernels (either from frozen, canned, or roasted on the cob and chopped off).
