Since I'm making this for the third time this summer, I thought I would share this recipe.
From: http://www.mediterrasian.com
3 tablespoons extra virgin olive oil
1½ tablespoons lemon juice
1 clove garlic—minced (crushed)
½ teaspoon dried oregano
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper, and extra for garnish
3 tomatoes—cut into wedges
¼ red onion—sliced into rings
½ cucumber—sliced into thick half-moons
½ green pepper (capsicum)—julienned
4 oz (120g) feta cheese—cut into small cubes
16 kalamata olives
PLACE the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine. PLACE the salad ingredients in a large bowl. POUR the dressing over the salad and toss gently to combine just before serving. Garnish with a little freshly ground black pepper.

5That looks absolutely delicious. Greek salad might just be one of my favorite things in this world.
Whole Foods actually makes a really delicious one with artichoke hearts and one of the best Greek dressings I've ever had in my life. Highly recommended if you don't have the time to whip up a tasty treat like the one pictured above
6This looks soooooo good..... I have a small allergy to Feta though, but I bet Mozzarella would be ok....maybe?
7That looks amazing, I'm going to pick up the rest of the ingredients tonight and make it tomorrow!

This looks GREAT!
I love the MediterrAsian cookbook, it really fits the lifestyle/cooking style I am trying to shift to. I get most of my recipes online.through blogs, but I felt compelled to buy this book becasue it is so infomatvie, and the cuisine is so important for true health.
