I made this yesterday for the 4th of July. It was delicious!
INGREDIENTS:
1/2 cup finely chopped Vidalia onion
4 cloves garlic, minced
8 large ripe Roma tomatoes, peeled and seeds removed, chopped
1 small can diced tomatoes
2 Jalapeno peppers, finely chopped
5 tablespoons minced cilantro
3 tablespoons lime juice
pepper
PREPARATION:
Combine onions and garlic with chopped tomatoes, peppers, and cilantro. Pulse in food processor until desired consistency is reached. (This is where the small can of tomatoes is handy--although not fresh, it gives the salsa a bit of soupiness that you cant get by dicing fresh tomatoes after theyve been seeded.) Refrigerate for 2 to 4 hours to blend flavors. Add lime juice and pepper to taste before serving.
This is pretty much the recipe I used, but its not an exact science!

This sounds great Crispy! Will definitely be trying it. I swear if could live off salsa and chips I would.
1After I cut up the Jalapenos, my fingers throbbed from their spice for literally two hours. I was freaking out, thinking the salsa would be too spicy, but it wasnt hot at all. You couldnt even tell there was a hot pepper in it! Next time I will have to add more, since I like my salsa with a kick.
2I like mine to have kick too. Maybe you could use rubber gloves next time.

4Yay! Im all for trying new recipes. I bummed this one off a friend when he brought it to a

June. It hit the spot that day for sure. This recipe is pretty much like all the others on the internet anyways, save for a few minor variations. Maybe it lacked a kick because the peppers
just werent hot enough? Idk. I will continue to experiment.
I also got to thinking what happened to the KG Challenges? Last I remember people were posting cool as cucumber dishes and then that was the end of that. What up yo?
