No... its not a burlesque dancers name... that I know of..."DIBS!" lol
Its a recipe for a spiced cocoa that I origianally put together into jars as gifts. It makes an awesome hot cocoa, and I like to drink it on particularly cold, dank days, or when I've got a touch of a cold.
I've also made cake out of it... I'm still tweaking the recipe a bit. Right now its nice, because the spices are not the first thing you taste... but I'd like them a little more pronounced, without being bitter or "hot".
Cocoa Diablo
In a sealable, airtight container, empty one can of cocoa powder. Take the empty cocoa can, and fill with brown sugar (don't pack it), add the brown sugar to the cocoa. Add 1/2 cup of dark chocolate chips, 1 Tbls cinnamon, 1/2 tsp ginger, 1/4 tsp ground chipotle chile, 1/2 tsp cayenne pepper. Combine all ingredients until well mixed, you don't want pockets of spices...
Split one vanilla bean and put into the cocoa. Close the container, and let sit for a week to let the vanilla infuse into everything.
After one week, remove vanilla bean and enjoy as hot cocoa... or my Cocoa Diablo Cake!
Hot Cocoa Diablo
On the stovetop, heat up 1 1/2 cups of milk in a saucepan. Wisk in ( I like a flat wisk for this) 2 Tbls "Cocoa Diablo". Keep wisking until cocoa is melted and combined with milk. Pour into a mug and enjoy.
Cocoa Diablo Cake
The great thing about this cake is not only how moist it is, but the spices in the "cocoa diablo" aren't too overpowering, but you can still taste them.
Ingredients
3/4 cup "Cocoa Diablo"
1/2 cup hot water
2/3 cup vegetable oil
1 3/4 cup POWDERED sugar
2 eggs
2 1/4 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1 1/3 cups milk w/ 1 Tbls vinegar
Directions
Preheat oven to 350.
Butter a 9" square baking dish, and set aside.
in a large mixing bowl, combine the cocoa and hot and mix until the cocoa is melted and like a paste (the chocolate chips in the mix will still be relativly whole... thats ok). Add the milk and vinegar mix, the oil and the eggs. Wisk together until combined. Wisk in the powdered sugar, the flour, baking soda and salt. Stir until combined.
Pour everything into the baking dish.
Bake for 45 min. OR until the center of the cake is no longer runny. You can test with a skewer, but this is a very moist cake, so the skewer won't come out completly clean.
Let cool.
Serve sprinkled with powdered sugar.
