I spent last weekend at a Yard Sale, so my mother very nicely decided to make breakfast for all of us participating. Of course, she decided to do something fairly simple that she could make ahead of time - and ended up preparing this dish.
It was delicious! And the nice thing about it is that you can change up the ingredients if you want to. Feel free to add bacon, to change up the cheese, whatever you fancy!
Sausage and Egg Casserole
1 pd bulk sausage
6 eggs (I have used more)
1 tsp salt
1 tsp ground mustard
6 slices bread, cut into 1/2 inch cubes
1 cup (4 oz) shredded cheddar cheese
1. In a skillet, brown and crumble sausage; drain and set aside.
2. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. Pour into a greased 11-in. x 7-in x 2-in baking dish.
3. Cover and refrigerate for 8 hours or overnnight before baking.
4. Bake, uncovered, at 350 for 40 minutes or until a knife inserted near the center comes out clean.
Yield 8-10 servings.

1Hehe. I didn't have very much, but knowing my mother, she used reduced fat cheese, turkey sausage, and did everything that she could to reduce the fat and calorie intake.

9Yeah, this definately sounds like something my family would eat (if any recipe has cheese, bacon/sausage and/or cream cheese, we're all about it). This is right up our alley, I'll have to make it for everyone when we get together for Christmas!
