This is one of my favorite Carrot Cake recipies. It is so moist
and Yummy!

2 cups flour, 2 tsp Soda, 2 tsp Cinnomon, 1/2 tsp salt

3 eggs, 3/4 cup Buttermilk, 2 cups sugar, 3/4 cups oil, 2 tsp Vanilla, 2 cups grated carrots, 1 small can of crushed pineapple (well drained) 1 cup coconut, 1 cup chopped nuts

Mix dry ingredients, beat egg, add oil, buttermilk, sugar, vanilla, and mix. Add to dry ingredients, mix in pineapple, carrots, nuts and coconut. Pour into lightly greased and floured 13 x 9 pan. Bake @ 350 for 55 minutes. Pour frosting over cake while hot.

Buttermilk frosting

1 cup sugar, 1 cube butter, 1 tsp vanilla, 1 tsp soda, 1 tablespoon light corn syrup, 1 cup buttermilk.

Place sugar, soda, buttermilk, butter & corn syrup into pan. Bring to a boil. Boil 5 minutes stirring as needed. Remoce from heat and stir in vanilla. Pour over hot cake and Enjoy.
