I recently found this recipe in a free publication from my local co-op. I gave it a whirl this weekend. Aside from being wicked easy and healthy, it was very yummy. If you don't want to deal with the mess of roasting your own pumpkin seeds (but that's the fun part!) you can usually find roasted pumpkin seeds--also called pepitas--in the bulk section of your grocery. Happy munching!
PUMPKIN SEED TREATS
1 1/2 cups roasted pumpkin seeds
1/2 cup dried cranberries
4 Tablespoons honey
1/2 teaspoon orange or vanilla extract
1. Combine the pumpkin seeds and dried cranberries in one bowl.
2. Mix honey and orange or vanilla extract in a large bowl until blended and smooth.
3. Stir pumpkin seed mixture into honey mixture until well combined. Press into a loaf pan that has been buttered.
4. Refrigerate at least two hours (preferably overnight) until the pumpkin seed and honey mixture has set. Cut into pieces and serve.
