Combine first 4 ingredients; spoon into a lightly greased 11x7 baking dish. Combine crushed crackers and butter, and sprinkle over chicken mixture. Bake, uncovered, at 350 for 30 min.
Ok, I'm making Tuscan Pork Stew - I got it out of the March 2007 issue of Parents magazine:
2 Tbs. Olive Oil, divided
1 medium onion, diced
1 tsp. minced fresh rosemary
3 cloves garlic, minced
1 cup carrot slices
1/2 cup chicken broth
2 cans cannellini beans, rinsed and drained
1 can (14.5 oz) Italian-style diced tomatoes (with basil, garlic and oregano)
1 pork tenderloin (1.25 lbs.), sliced into 1/2" thick slices
1. In a saucepan, heat 1 Tbs. olive oil over medium heat. Add onion and rosemary, cover and cook until onion in tender, about 6 minutes. Add farlic, cook 1 minute more.
2. Place carrots in bowl, cover, and microwave 4 minutes. Stir broth, beans, tomatoes, and cooked carrots intro saucepan with onions; bring to a boil, reduce heat, and simmer 10 minutes.
Remove 1 cup of bean mixture, cool, and puree in blender or food processor; add back to saucepan.
3. Meanwhile, heat remaining 1 Tbs. olive oil in a large skillet over high heat. Add pork in small batches and cook, turning once, until browned and cooked through. (6 minutes). Serve bean
mixture over sliced pork.
Well, I'm a little late. But, we had pork chops marinated in soy sauce and then 'd then sliced and
tossed with sliced onions and rice vinegar, pepper and sea salt. And tofu diced and marinated in soy sauce and ginger. And cauliflower. And rice.
Twink - I miss your roast chicken and veggies! Its too flipping hot to run the oven these days. Come fall, though, we'll be eating it all the time again too.

For my hubby I made white rice with veggies which I call Rice Primavera, garlic sauteed mushrooms, grilled polenta and a salad. For me I just threw a big steak in the pan

We got a milkshake from Sonic, and a ranch bacon chicken sammitch from Backyard Burger.
I did clean the living crap out of the kitchen, though, and we're going to Kroger tomorrow to stock up for the week. I'm definitely getting stuff for SPM's recipe and Whip's lasagna.
I had never had a Sonic milkshake until last night. (I'm a loser, I know.) I got two sips while we were in the car, and then I dropped it in the foyer, and it exploded EVERYWHERE.
So, naturally, I had to go get a replacement this evening. It was tay-stee. I'll be back.
Yum! That may be dinner on Friday! Tomorrow hubbins is making steak and Thursday I'm making my green chile chicken enchiladas. I'm really looking forward to that!
i did not cook as i am out of town so i got to eat at the commissary type place. i had a salad and soup. hubby and the boys heated up leftover chicken n' dumplins.
Well, the tuscan pork stew was AWESOME! Very very good. I think the only thing I'll do differently next time is cut the pork into smaller pieces first so it's all bite sized instead of in
strips. And I think it's going to hold up pretty well for leftovers! I have the pics, maybe I'll get them all uploaded tonight.
ooh ill have to try .. we had bbq chicken sandwiches, pot and mac salad chips and pickles. very healthy i know but we have all the leftovers from the bbq.
aww aud. We took naps when hubby got home and ended up sleeping until 6:30. Eek! We ended up
having a DiGornio (sp?) pizza and salad with ice cream cones for dessert since that was quick. Gyros tomorrow night!

3 cups Chopped cooked chicken
1 can Cream of chicken soup
8-oz. Sour cream
1 tbsp. Poppy seeds (optional)
1 1/2 cups Crushed round buttery crackers

12chicken gyros, veggies, and baklava for dessert is the plan.. yum! I need to start marinating the chicken soon though or it'll be something else.
