So I'm all about the soup lately. I went to lunch with friends on Friday and had tortilla soup then Sunday I was really craving it again. I decided to try my hand and make my own. I scoured the internet for recipes and meshed three together and came up with this. The recipes that I found called for chicken tenders which you cook or chicken breasts which you poach. I was lazy and wanted instant gratification and used canned chicken. enjoy!
2 cans cooked chicken
1 lg onion chopped
1 28 oz can fire roated tomatoes
2 garlic cloves minced
1 orange bell pepper (you can use which ever kind you like..i had this on hand and used it)
1 jalepeno, de-seeded and chopped, I used jarred ~ again I was lazy last night Smiling
1 T ground coriander
1 tsp ground cumin
1 tsp salt
1/2 tsp pepper
2 T olive oil
juice from two limes
Fresh Thyme, 1 T (about 5 or 6 sprigs with leaves pulled off)
1 qt Chicken Broth
white corn tortillas (I only used about three but that is because it was just me eating the soup last night and i wanted some for lunch today)
avocado, sliced
pepper jack cheese, shredded
cilantro (garnish)
Heat oven to 400 degrees. Brush a little olive oil on tortillas, then cut into strips and sprinkle with salt. Bake for 10 minutes or until crispy. Heat oil in pan and saute onions, garlic, jalapeno and peppers for about two minutes. Then add chicken, spices, and tomatoes. Saute for about two or three minutes. then add chicken broth and lime juice. allow to cook for twenty minutes. Place a few tortilla strips and avocado in bottom of bowl and pour soup over. Sprinkle with cheese and cilantro. Very tasty and perfect for a cold night.
