Hey there, sugars!
I have somewhat recently become totally lactose intolerant... as in, no butter, no cheese, no yogurt... nothing dairy. I'm totally opposed to relying on drugs to allow me to eat something my body clearly doesn't want to digest, so I've been experimenting with vegan cooking. It's been great thus far but as the holidays approach I've realized that I can't eat most of what everyone else in my family can because it relies so heavily on butter, cheese and cream for flavoring. I'm old enough to bring a dish to pass, so I was wondering if anyone knew of any *good* vegan substitutes or recipes? I say *good* because I've tried some VERY BAD vegan food substitutes, and don't want to venture down that road again.
I've found a good vegan butter substitute in Earth Balance margarine, and I've heard you can use coconut milk for creams (but I haven't confirmed this). If you have a suggestion for a cookbook, even, I'm all ears.
So ladies... any suggestions?

this = hard - there are possibilities - like - part of Italian & Japanese and Chinese kitchen - lots of salads - veggies - with various sauces - even with soy milk - you just replace milk products with soy bean products. there are wonderful things on the market- you can only do one thing - taste - try all products and chose the ones you love most
1Silk is the only brand of soy milk that I'd consider using; it's wonderful
Check with your local Whole Foods; I bet they have somebody who works there who also knows
2This question is so timely! I have a friend who is lactose intolerant. We were speaking on the phone just last night when she brought up a book written by Tal Ronnen, who is vegan. This title is "The Conscious Cook." I can't claim to know anything about the book or it's contents, but searches on Amazon.com and BN.com both produced very positive reviews. This might be a good place to start. Best of luck to you!
3I like to use almond milk as a milk replacement.
4Vegannaise is a good mayo sub.
Two cookbooks I like are Skinny b*tch in the Kitch and The Kind Diet.
I've recently been experimenting a lot with vegetarian & vegan recipes as well. I was looking for a good cookbook (a lot out there focus on eating raw, I wanted an actual book that required me to cook my meals!)
5If you're looking for some great recipes, I found Tosca Reno's Eat Clean Cookbook. There's over 75 vegan recipes and over 40 vegetarian recipes (and of course some with meat that you can easily eliminate the meat part). And the nice thing is there's a great balance between breakfast, sides, soups, salads, mains, & desserts. If you're looking for some new recipes I definitely recommend it! Enjoy!
A great deal of French, Japanese and Mexican cuisine has no lactose ingredients. Japanese has become my favorite for simple and quick vegan comfort food. Gomaae Spinach for instance is sweet and rather pleasing without an replacement for chicken noodle soup. I can happily pass on recipes if anyone would like.
6For some reason part of my comment got lost. It should read:

7I'd appreciate it, heltivir. i'm not a vegan but i try to eat responsibly and i'd like the ideas.
