I found this recipe on www.cdkitchen.com and let me tell ya, it is SOOO simple and extremely good!
Ingredients:
2 cups heavy cream (whipping cream)
5 egg yolks
1/2 cup sugar
1 tablespoon vanilla extract
1/2 cup of light brown sugar
Directions:
Preheat oven to 275 degrees.
Whisk the cream, egg yolks, sugar, and vanilla extract together in a bowl. Mix it all up until it gets nice and creamy. (I used my Kitchenaid mixer). Pour this mixture into 4 ramekins. Place the ramekins in a baking pan. Fill the baking pan with hot water, about halfway up the sides of the ramekins. Place the pan with the ramekins in the oven for 45 minutes to an hour or so. After 45 minutes check them every ten minutes. You'll know they're done when you can stick a knife in the center and it comes out clean. (I had to cook them a lot longer but I forget how much longer. Give yourself longer, don't make them if you are in a rush HAHA.) Remove the ramekins from the baking pan and let them cool for 15 minutes or longer.
Then put them in the refrigerator and let them chill overnight.
To Serve:
Sprinkle a thin layer of the light brown sugar on the top of each. Cover the custard with the brown sugar but try to have a thin layer not thick. Now torch it to melt/caramelize the sugar. If you do not have a torch you can put it under the broiler for 1 min. Keep an eye on them if you do it that way. If you have neither then I guess just throw them in the oven until the sugar melts. Not sure if that will work but it will be good enough. Enjoy!
