I LOVE this soup. Now that it is getting colder out its time to cook a hearty soup.

This soup is really easy to change the ingredients and mix things up. I don't have exact measurements, if you like to be more exact here is my inspiration for the soup.
Here is how I make it


1/2 of a large onion
1 red bell pepper
1/2 green bell pepper
(you can add so many more veggies like corn, zucchini, beans (ok not a veggie) etc)

couple of cloves of garlic finely chopped (optional)
green onions (optional)

In a soup pot I heat up some chicken stock (I just use one box of stock or a couple of cans)

I dice up three skinless, boneless chicken breasts that I grilled up the day before.

I start warming up the chicken in the stock on a low heat. If you are using raw chicken you will poach it in the stock.

Chop up three slices of bacon (optional) to be used as a topper for the soup

mmmm sizzling bacon......cook until crisp. Once cooked I remove and place on a lined plate

Place the veggies in the same pan you cooked the bacon in. Don't forget to season with salt and pepper

After a few minutes of cooking I add a can of Ortega green chilies and my garlic

Cook until veggies are soft and onions are transparent

Once veggie mixture is cooked add it to the stock and chicken

Add a 28oz can of crushed tomatoes

Don't forget to season!!!
Salt and pepper
I also add some hot sauce and red pepper flakes for a kick (any type of chili would do)

Now you can serve the soup at this point but I like to let it cook for a little while and incorporate all the flavors

Now its time to serve

Crunch some chips in the bottom of a bowl

add your favorite type of cheese

ladle in some soup

Top with some cilantro and bacon (optional) and
ENJOY!!!!!!!!!!!
