
I made an apple crisp with apples from the aunt and uncle's orchard¹.
No huge story today, just a recipe and some photos.
Sorry things aren't precise but think of them as guidelines.
[filling]
- 5-6 peeled, cored, and sliced apples (I'd like to tell you exactly how many but they were already quartered when I got them)
- ? cup granulated sugar
- about ¼ cup of honey
- 2 Tbsp. cornstarch
- water
- half and half or heavy cream
- 1-2 Tbsp. butter
- cinnamon
- freshly grated nutmeg
- splash o'brandy (or two splashes if you're feeling festive)
- handful of raisins
[topping]
½ cup all-purpose flour
½ cup chopped pecans
¼ cup firmly packed brown sugar
½ tsp. cinnamon
¼ ginger
¼ cup cold butter, cut up
1. Filling: combine apples, raisins, sugar, honey and a half cup of water in a large saucepan. Bring to simmer over medium heat, then cover and cook until apples are tender. Add the brandy. Dissolve the cornstarch in the cream/half and half in a seperate bowl and then stir into the apples. Bring to a boil and stir occasionally for two to five minutes. Remove from heat. Stir in the butter, cinnamon and nutmeg. Let cool.
2. Topping: combine everything except the butter into a bowl. Cut in the butter until you have coarse crumbs. Technically you can use a pastry cutter or 2 knives but I just used my hands. Set aside.
3. Spoon filling into a pie dish or a large ramekin. Sprinkle topping evenly over apples. Bake for 10 minutes at 400º F. Reduce temperature to 375º F and bake for another half an hour. If the topping is browning too quickly cover loosely with foil. Cool on wire rack. Get your eat on.
