I don't know if it's because the weather is getting cooler or what but I've been craving comfort foods that remind me of my mom's cooking. This is one that takes me back.
Chile Relleno Casserole
10-12 fresh roasted chilies (you can substitute for canned chili)
1 lb ground beef
1 small onion, chopped
3 eggs
1/2 cup milk
1 cup Monterrey Jack cheese
1 cup medium Cheddar
1/2 teaspoon cumin
1/2 teaspoon pepper
1/2 teaspoon salt
Optional:
Tomato and lettuce
Sour cream
Brown ground beef and drain the fat. Add chopped onion, pepper and cumin. In a separate bowl, mix eggs, milk and salt.
Grease the bottom and sides of a 9"x13" baking dish well. Layer meat, cheese and chilies. Stir egg mixture and pour over layered ingredients. Bake until egg mixture is cooked through - about 30 to 40 minutes at 350 degrees.
Top with tomato, lettuce and sour cream, if desired.
