This is always a hit. It's a little time consuming, but worth it. From this recipe.
As always, my presentation sucks. But, I didn't want to dirty an extra bowl. :lazy:
INGREDIENTS
2 pounds red potatoes
6 eggs
1 pound bacon
1 med onion
1 stalk celery
2 cups mayonnaise
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Chop the potatos into roughly equivalent pieces. Add to water and cook until tender but still firm. Drain and set in the refrigerator to cool.
Hard boil the eggs, cool and chop.
Brown bacon, let cool on cookie cooling rack (for max crispiness) and then chop/crumble into small pieces.
Cook your macaroni, let cool in fridge.
Mix together the mayo, finely grated onion (well, as much of it as you can), finely grated celery and seasoning. I use Nature's Seasons, but whatever you like.
Then, add in the cooled potatos, eggs, chopped bacon and macaroni. Toss your salad!
I like to make the potatos, eggs and noodles in the morning and leave them in the fridge. Then, I make the bacon and mix the salad together mid-day, and take it wherever that evening. It's really best to let it set overnight, though, if you can.

2Yum, tater salad.
~Stressed is desserts spelled backwards.~
3Oh, and I forgot to mention that it's really easy to make it as it's convenient. I actually made the whole salad yesterday. But I had to give the bacon to a friend Saturday night, so I didn't have any. I picked some up yesterday afternoon, but didn't feel like finishing the salad last night. So, I made the bacon and finished the salad this morning.

4How much macaroni? It's not on the ingredient list.
5Ha ha ha, sorry. I forgot. It's my own addition. Lessee...I buy the smallest box of macaroni and I only use about half to two thirds of it.

this is how I do it too jenn!! sooooooooooooooooo yummy!
8oops except for the celery stalk, bad experience with celery when I was little....ate too much and got sick so I use the celery salt but it taste just like you have them in there without that crunch.
9delicious! blue cheese would be good to add to this too.
10Jamers - I grate mine because I don't like little crunchies in the salad. But, if I'm out of celery, I just use celery salt too.
