I made this last night and it was delish!
Ingredients:
1 Butternut squash
Brown sugar, butter, salt & pepper
Directions:
Cut the butternut squash lengthwise, remove the seeds, place in a pan with about 1 inch of water and bake at 350o for an hour, or until you can stick a knife smoothly.
Discard the water that's left in the pan, season with salt and pepper, then sprinkle a good amount of brown sugar in the cavity and all over the squash, add butter on top, and put back in the oven for 10 more min.
It comes out so soft that I just scooped a portion out and served it as a side dish.
The melted butter and sugar combines perfectly with the natural sweetness of the squash.

If you make it in the microwave oven cover the pan with plastic wrap and cook for about 10-15 min. Check it to see that it's soft

3ohh it's delicious Karma, you should try it! I made Rice Primavera which is basically white rice that I mix with a bag of frozen peas&carrots + corn, it looks very colorful. I served the rice molded (use a small bowl), 2 scoops of the squash (I sprinkled more brown sugar and sliced butter on top), and for hubby I added a grilled veggie burger + salad. For me I put a piece of roasted chicken. I was very good!

6No Karmy, I must admit that I don't cook like that every night. But yesterday I went on a baking frenzy. The temperature dropped to a very pleasant mid 60's so I felt like it
I usually steam veggies for my hubsy and add pasta, rice, couscous or whatever else I find in my pantry, and top it with some kind of veggie product like a burger or nuggets. And for me I just eat whatever I can find in my fridge
