I came home to find two brown bananas, so rather than just tossing them, I made some quick and easy banana nut muffins. Enjoy
1 cup flour
3/4 teaspoon baking soda
1/4 teaspoon salt
2 brown bananas
1/2 cup brown sugar
3/4 cup butter-melted
1 egg
1/2 teaspoon pure vanilla
1 cup walnuts chopped
1. Preheat oven to 375 degrees and butter a muffin tin (it makes about 9 muffins)
2. Mix the dry ingredients in a bowl
3. Smash the bananas, add the brown sugar and mix it like you mean it. Add the butter, egg, and vanilla. (probably use a bigger bowl than I did) 

4. Mix the dry ingredients with the wet and add the walnuts
5. Fill up your muffin tin

6. Bake for 17 to 20 minutes

Oh yum! I only have 1 brown banana though or other wise I'd make this asap!
1According to my boyfriend, although, i have never tried to do this. You can actually microwave a yellow banana for short while (probably 30 seconds) and it will be mushy like a brown one!
2Oooh these look so yum! I may have to try that tip. I can never keep bananas in the house long enough!
On a side note, I'm on a health kick and picked up some whole wheat flour yesterday. I was planning to make some muffins for the kiddos, do I need to do anything different or are whole wheat flour and regular flour pretty much interchangeable?

4jen76 - the whole wheat and all purpose are mostly interchangable. if you do a full 100% substitution, you'll end up with a much denser muffin. I've only ever done about half and half. Also, you could try whole-wheat pastry flour which is lighter than whole-wheat flour. if you try, let us know how they go.

be sure to grease and flour the pan!
As soon as I buy a bunch of bananas, I throw them in a plastic bag with an apple and seal it up tight, then set it on top of the fridge. You'll have brown bananas in about 3 days.
