Cheesecake, In Honor of Blanche Devereaux

This recipe comes from Moosewood Cookbook by Mollie Katzen.  Like Rue McClanahan, it is a classic.  Gather round the table, ladies, and have a piece of cheesecake and make a toast to Blanche.

 

Montana's Mom's Dynamite Cheesecake

 

Preheat the oven to 375 degrees.

 

Crust:

crumbs from 16 graham crackers

1/2 stick of butter

1 tablespoon honey

1 tablespoon flour

*Mush up with fingers and press firmly into the bottom of a spring form pan.

 

Filling:

16 oz. cream cheese

1/3 cup sugar

4 eggs

1 teaspoon vanilla

1 lemon, juice and grated rind

(I like to add 1 tablespoon of honey, as well)

*Blend until smooth and creamy.  Pour on top of crust and bake for 25 minutes, or until set at 375 degrees.

 

Topping (optional):

1 pint sour cream

1/2 cup sugar

1 teaspoon vanilla

*Blend.  Pour on top of cooled filling and bake at 375 degrees for 5-8 minutes.  A must:  cheesecake must set in the refrigerator for AT LEAST 12 hours before it will be firm enough to slice well.  If you get impatient and cut before it is completely set, the top will be runny.
