Madeleines are cakelike cookies that were made famous by Louis XV in France. For my mom's office bday party I decided to try my hand at making Madeleine cookies/cakes because I just watched that movie The Transporter and the lead girl (Qi Shu) made some for Jason Statham's character (so freaking hot Shocked even though he's sorta aged......damn he's fine Eye-wink in that movie but i'm probably the only one that thinks so) Sticking out tongue

They're pretty easy to make, and the ingredients are something everyone usually has on hand, butter, sugar, flour, eggs, baking powder, some kind of flavored extract Laughing out loud :D real simple!

I made two types a Chocolate Hazelnut madeleine and a Lemon poppy madeleine . It's funny bc I had to use a miniature tea cake mold rather than the standard madeleine mold :/ argh, frustrating going to Linen N Things and not finding what you need...anyways, so I made them in the Nordic ware mini tea cake mold.

For the Chocolate Hazelnut madeleines, I used a recipe from www.frenchfood.about.com which is Madeleines aux Noisettes. It called for 6 egg whites, whereas the Joy of Baking recipe for the Lemon poppy seeds called for 3 whole eggs.

For the Lemon Poppy seed one, I used the same recipe YumSugar used for her 'My First Madeleines', which is from Joy of Baking
EXCEPT i did their variation of Lemon-Poppy Seed Madeleines - Substitute 3/4 cup (150 grams) granulated white sugar for 2/3 cup white sugar, substitute 1/2 teaspoon pure lemon extract plus 1 teaspoon finely minced lemon zest for 1 teaspoon vanilla extract, and add l tablespoon poppy seeds after adding butter. Proceed with recipe.

TIPS:
-It's done when you touch it and it springs back
-Wait for it to cool down to 'dry' so it won't be too moist when you eat it

Overall:
These were good but not dazzling, they'd probably go well with tea. I wish i had the classic shell mold for the Madeleines, maybe they'd be more 'cookie' like bc the ones i made where a bit denser in the center. Anyways, these were still delicous and you can make so many variations on the recipe. Laughing out loud goodluck!
