Chopping Herbs
Ok Im usually pretty handy with a knife and my chopping skills are not bad. I recently bought fresh Itlain parsley and cilantro (
). When I was making my dinner tonight I decided to add some of these to my pasta. I soon discovered how crappy I am at chopping up herbs. I tried a trick I saw on t.v where you roll the leaves then chop them but I suck at that too. So I was wondering you guys have any tips on chopping herbs (a fine chop)

just stab it several times till it stops screaming. Oh wait that was hubbys finger.
I just put a bunch of herbs on my chopping block. Take a big knife, place a hand on either end, hold the pointed end steady and with the other hand on the handle end just sort of chop up and down really quickly. Works really well for me.
How sharp is your knife JessNess? That makes a big difference.
Yeah, I was going to suggest working with a sharper knife and/or making sure the cutting surface is steady. A lot of time its hard to chop finely when your cutting board is sliding over your counter top.
There is a herb cutting kit you can get, it's a slightly concave cutting board and a rounded blade, you just rock it back and forth and it cuts the herbs.

I used to have one of those curved cutting things. I bought it because Nigella told me too.
But, I never did get a curved cutting board, so I think I missed out on the purpose of the thing.
It's called a mezzaluna I believe.

Rolling the leaves really only works for herbs like basil or mint (where the leaves are larger), for smaller herbs like parsley and cilantro, remove them from the stems first and make sure you have a sharp knife, it will make all the difference. Then use twinkle's method (or a mezzaluna if you've got one). Although for delicate flavored herbs (like cilantro and mint) I usually just tear them.

I know you're supposed to wash EVERYTHING these days but do you wash your herbs? I wash the leafy herbs but I have to admit I don't wash thyme or rosemary. Thoughts?
huh I never thought of that. I usually have dried herbs so I never really needed to wash them. I dont know. They are so small I would be afraid of washing the little leaves right into the sink.
yea you better wash everything. Never know who decided to be lazy on the job and pee or poo near the plant ya know
i do the same cut method as twink and jenn.

I rinse them. Yayi, cilantro/coriander is hard to find here too. But I got lucky last night and found some. I wonder how hard it would be to grow
When I was younger I bought this long pot that contained different types of herbs. These things were resilent. Im horrible at remembering to water plants so the herbs would always get dry and brown. I would then water them a couple of time and they would spring back to life. They were pretty easy to grow. You can even grow them inside near a window

i usually just rip the leafs off without a knife and break them with my fingers. You have to wash because it usually has soil
I've been trying to grow some Hawaiian chili peppers here because for some reason nobody in North Carolina sells them.
LOL OMG I suck. I've damn near killed it one time already by leaving it out in the cold for too long. Thankfully the hubbin can bring a stick back to life. So,
I'm back on track now, but I haven't watered it in at least three weeks and the soil STILL feels wet.
It's growing though. I guess I super duper overwatered it for a while.

Rosemary took over my garden in the south. I grew strawberries, tomatoes, green bell peppers, basil and rosemary. Oh, no, it was the basil that took over, and it killed my rosemary. LOL.
Haha I'm not kidding I even killed a cactus that my bro gave me last year

Yeah I felt kind of bad my bro bought me one in London and I killed it hahahaha I watered it like once and let it sit on my dresser and it died hahahahahahah
