Help - I need potluck ideas
I totally forgot that my department at work is having a potluck on Thursday.
I have no idea what to bring. Does anyone have any ideas or suggestions?
Here are the details:
1. There are about 30 people in my department so it has to feed that many people, but since 30 people are bringing stuff, I don't need 30 full servings of anything.
2. I'd rather not bring a dessert. I prefer savory to sweet.
3. We don't have an oven or stove at the office, just microwaves. So I'd need to bring something that is either cold or room temperature, can be easily heated in a microwave, or can be made in the crockpot.
Help!

I bet I can find a good crockpot recipe. Do you want like an appetizer kind
of dish or a side or an actual meal?
I'm making my potato salad right now! I'll post the recipe and pics in a bit. Everyone always loves it.

You could always go with a basic... soup or chili. Hasbrown casserole in the crockpot.. hmm.. I will keep thinking
I was wondering about hashbrown casserole in the crockpot. Is that possible?
I might make bacon horseradish dip, it's easy and yummy.
How about making pulled pork sandwiches using a crock pot?
That's always a hit whenever I make it.
Pigs in a Blanket! I do this one alllll the time for potlucks. It's really easy.
You need 1 can of biscuits and a pack of sausage/hotdogs.
1. Cut the biscuits while still uncooked and doughy, then cut the sausages.
2. Roll the sausages up in the biscuit dough
3. Bake for 10-15 min. at 350 degrees.
Done! It's easy, cheap, and quick.
Mmm, that sounds good, Doc.
It says to cook it on low for 8-12 hours, but I'll only have about 4 hours. Do you think they'd be as good if I cooked them on high instead?
Oh, wait, I could do the first part the night before, then do the rest the morning of. Maybe that'd work.
Yea, I'd do it the night before (just before you go to bed). Keep it on low and it should be ready by lunch time.
Oooh I just printed that one out, DRC! That sounds awesome.

I usually do stuffed mushrooms, then bring them in tupperware and reheat them in the microwave. It's not great for the texture, but they still taste the same and I never have leftovers. I always try to be the one who placates the one vegetarian in the department, because everybody else always brings something with meat in it.
I just googled crockpot hashbrown casserole and this came up. You could use whatever recipe you would like but it gives a good idea of how long it takes.
INGREDIENTS:
2 cups sour cream
1 can (10 3/4 oz) cream of mushroom soup
dash pepper
2 cups Velveeta cheese, shredded or cubed
1/2 cup chopped onions
3/4 teaspoon salt
1/4 teaspoon pepper
2 pounds frozen hash brown potatoes
PREPARATION:
In a large bowl, combine sour cream, soup, pepper, cheese, onions, salt and pepper; gently stir in potatoes. Spoon mixture into lightly buttered slow cooker or crockpot. Cover and cook on high for 1 1/2 hours; turn to low and cook 2 1/2 hours longer.
Serves 8 to 10.
OR
Ingredients:
32 ounces hashbrown potatoes
1 can cheddar cheese soup
1 can cream of mushroom soup
1 cup sour cream
1/2 cup butter
Put hashbrowns in crock pot. Mix soups and sour cream together. Pour over hash browns. Cut up butter and stir into hashbrowns. Cook on low for 4 to 6 hours, stirring occasionally.
How about little smokies and BBQ sauce in the crockpot.

Very good ideas here! I'd just go to Applebees and buy a bunch of their hot wings

Isn't pot luck dinners just things you throw together?
Like:
beef stew
chicken and dumplins
3 bean soup
chili
goulash
pot roast
things like that?
I just made a pot roast last night...fixing to post the recipe with pics~
I was going to suggest a salad of some sort, but it looks like you guys got it covered.
Jamers your suggestions have made me hungry
those little meatbolls in a crock pot are so delish! And you can buy them all ready & frozen, just add your own (bottle of Ragú) sauce...

I was going to say, make Aud's hashbrown casserole(but then saw that you won't have a good way to heat them up), and her BBQ crockpot meatballs are good, too.
Jamers - No, a potluck dinner is one where everybody brings something.

OoOO, Crockpot meat balls sound delish!
Ooh, Megatron, a salad is a good idea, and EASY.
Maybe I'll make one with spring mix, cucumber, red onion, bleu cheese, apples, and sunflower seeds with balsamic vinaigrette.
meatballs would be easy and good. A quick & easy crockpot recipe is a bag of meatballs, a small bottle of ketchup, a jar of chili sauce, and a jar grape jelly. Combine them and warm on high for 3-4 hours.
err..on low, not high
All of the suggestions sound yummy though. I haven't ate lunch yet, and now I'm hungry.
Can I use frozen meatballs, Wynter? :lazy:
Maybe I'll make a few of these sandwiches and slice them nice and thin. And put frilly toothpicks in all the slices.
yep, you use frozen ones. It's VERY easy!
Yeah, Aud's recipe used frozen meatballs, and I forget the ingredients in the sauce exactly, but it was ketchup, brown sugar, mustard, onion and maybe one or two other things.
Aud's meatballs are AWESOME!

That looks pretty easy, maybe I'll do that.
Or Yumsugar's sausage and potatoes.
Or my friend's sausage and peppers recipe.
whip go to my profile page and under recipes you will see both recipes. the meatballs and hashbrown casserole. i pm'd you what i thought you could do to heat up the casserole. i also have the cheese ball recipe on my recipe page if you want to do something the night before and then not have to think about it heating anything up the next day.
i am sure whatever you decide will be
worthy.
I was all ready to make meatballs and then I just found out someone else is making meatballs.
ooh i hope they are good.
Oh crap Whip! See what kind they're making.... They could be making Turkey ones or a Swedish one...
I find that taco salads always go over well, but if you want something hot, I have had good luck with a slow cooker of chili too.
Chili is a really good idea Jinx; with some crackers and cheese.

oh bummer! meatballs is easy and yummy. Chilli is another great choice. You better get dibs on it because it's usually a staple at every potluck

Oooh, that sounds good! I was leaning towards Aud's hashbrown casserole but maybe I'll do crab dip instead.
* 3 (8 ounce) packages cream cheese, softened
* 3/4 cup mayonnaise
* 1/4 cup white wine
* 2 (6 ounce) cans crab meat, drained
* 1 teaspoon prepared mustard
* 1 pinch seasoning salt
* 1 dash garlic powder
* 1 pinch onion powder
* 1 dash Worcestershire sauce
You can add cheddar or mozzarella cheese to it too
Here's the link
When I buy crab meat, I usually get it at Trader Joe's (16 oz. can) of the best crab meat. When you buy crab meat, it will run anywhere between $11.00- 16.00 for a large can (16 oz)
Ooh, I printed that one out too. That sounds delish!
