I was craving cheesecake soooo much the day before Easter.
I hadn't eaten it for a year or 2!
It had to be done, that day, I HAD to have cheesecake!
So I seached the web for a cheesecake recipe, first New York Style Cheesecake (my fave) and then just plain cheesecake.
I wasn't finding anything like WOW, so I just got the first recipe I could find next...and made it my own!
Here is the recipe I started out with:
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
2 Tbsp. fresh lime juice
1/2 tsp. vanilla
2 eggs
1 HONEY MAID Graham Pie Crust (6 oz.)
So I decided to make cheesecake my way and not as fat:
1 pkg. PHILADELPHIA Cream Cheese, softened
1/3 cup sugar
3 Tbsp. fresh lemon juice
2 Tbsp. of plain yogurt
1 Tsp. vanilla essence
1 egg
1 graham cracker pie crust (see how to make below)
MAIA'S CHEESECAKE (hahaha, thats meee)
How to make the crust:

Break (200 g package) graham crackers into small pieces and place into a food processor.

Pour it all into a bowl

In the meantime put 150 g of margarine in the microwave for 20 seconds, or wait for it to have a normal temperature. (takes ages)

Now put in the margarine in the graham crakers (that are finely chopped)

Now comes the fun part, rub the graham crackers with the margarine until they are well blended.

Until it becomes like this...

Now just press the graham crackers down until making a crust.
How to make the cheesecake:
Before we start, preheat the oven to 350 F.

Here are the ingredients you will need (they are said above, I forgot to show the yogurt).

Cut the cream cheese into 7 cubes (just to make it easier to mix)

Leave the cream cheese aside for a while so you can squeeze your juice!

Now add the sugar and lemon juice (it looks like a lime in the picture above, but its a lemon guys)!

Beat the sugar, cream cheese and juice until creamy. Now add the yogurt.

Beat the sugar, cream cheese, juice and yogurt until very creamy. Now add the egg.

All done! Now just pour it all into the pie crust.
I wanted it to have a creamy look to it, so I swirled it around with a spatula.

Off to the oven!

Set the timer to 40 minutes.
All done!
Ok so it may not look beautiful and delicous, but it tasted out of this world GOOD. I think that the things that arent as pretty are the best. This is by far the best dessert I have ever made, hands down!

Last time I had a cheesecake (like I said above) was probally 2 years agoooo.
I can tell you this though:
My cheesecake turned out to be nice and solid, not fluffy and creamy. It was like a creamy solid, I love that texture.
Is that how cheesecake should be? I don't remember!
When you eat it, you CAN'T tell that it is totally cut down.
The taste is full and rich, just like any cheesecake.
BTW: I kept it in the fridge for 24 hours before I served it to eat.
