i love weekends cos that's when i do my baking/cooking. i was reading this recipe book called 101 Cakes and Bakes: Tried and tested recipes and came upon something i really liked: Strawberry Cheesecake Muffins!

I tweaked their recipe a little, and here's what i came up with:

INGREDIENTS
350g/12oz plain flour
1.5 tbsp baking powder
140g/50z caster sugar
grated rind of 1 large orange
grated zest of half a lemon
0.5 tsp salt
2 eggs
250ml milk
85g/3oz butter, melted

FILLING
85g/3oz cream cheese
1 tbsp caster sugar
strawberry jam

METHOD

1. Preheat oven to 200C/Gas 6. Line a muffin tin with 12 paper cases.
2. Sift flour and baking powder into a large bowl, then stir in the sugar, rind & zest, and salt.
3. Beat the eggs and milk in a bowl, then stir in the melted butter and gently mix into dry ingredients to make a loose, slightly lumpy mixture. Don't overmix else it'll turn out too hard!

4. Mix together the soft cheese and caster sugar for the filling.
5. Half fill the paper cases with muffin mixture, make a little well in each and fill the well with some strawberry jam and cream cheese mixture.

6. Spoon over the rest of the muffin mixture and fill the muffin cases.

7. Bake for 25 mins or until muffins are well risen and golden brown.
8. Remove from tin and allow to cool on a wire rack.
