1 3/4 cups water
1 tablespoon instant espresso powder or instant coffee powder
1 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups firmly packed dark brown sugar (about 1 pound)
2 large eggs
2 large egg yolks
FROSTING
2 vanilla beans, split lengthwise
1 1/4 cups whipping cream
1/2 cup sugar
4 large egg yolks
1/8 teaspoon salt
1 pound bittersweet (not unsweetened) or semisweet chocolate, finely chopped
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces, room temperature
1/2 cup light corn syrup
1/4 cup sour cream

1/2 cup granulated sugar
1 pinch of salt
2 large eggs
2 cups whole milk

FOR THE WHIPPED CREAM
2 cups heavy cream
1 tablespoon confectioners' sugar
FOR THE ASSEMBLY
Yellow Cake, baked in two 8-inch round cake pans
4 large bananas, peeled and halved crosswise then lengthwise
1/2 cup store-bought chocolate sauce, warmed
1 maraschino cherry, for decorating
