INGREDIENTS1 pound ground beef
2 (14.5) oz cans diced tomatoes
2 cups cubed potatoes
2 carrots, chopped
1/4 cup uncoooked white rice
1 onion - chopped
1/8 teaspoon ground black pepper
Salt to taste
6 cups water
**In lieu of carrots use celery if you are not a carrot fan.

I made this cake over the weekend and it was fabulous! It only took three minutes to make the batter, the cake baked in just five minutes, and it took maybe five more minutes to sprinkle some sugar, spread the jam, and then roll the cake. I served it with some homemade whipped cream but it's also delicious on its own.

Famly recipeIt's that time of year! Pumpkins galore! And, everyone loves roasted pumpkin seeds.
Here is a twist to make them a little extra special!
INGREDIENTS3-4 cups pumpkin seeds
1/2 cup butter, melted
1/2 teaspoon garlic salt
1 teaspoon salt
1 tablespoon Lawry's Seasoning Salt
DIRECTIONS1) Preheat the oven to 300 degrees F (150 degrees C).

INGREDIENTS1 (21 ounce) can apple pie filling
1 (9 inch) graham cracker crust
2 (8 ounce) packages cream cheese, softened
2 eggs
1/2 cup sugar
1/4 cup caramel topping - Smuckers or any brand
1/4 teaspoon vanilla extract
DIRECTIONSPreheat oven - 350 degrees.
Remove 3/4 cup of apple filling and set aside.

Blondeyy's grandmotherIt is that time of year! Apples galore! This is a fabulous alternative to applesauce and cranberries for your Thanksgiving meal if you want to change it up a bit this year!
It is an absolutely Heavenly dessert and so easy!
INGREDIENTS6 green apples or McIntosh (I use whatever the best deal is at the grocer or farmer's market)
2 1/4 cups water
1 1/2 cups fresh cranberries
3/4 cup packed brown sugar
3 tablespoons honey
6 scoops vanilla ice cream (optional)
DIRECTIONSPreheat the oven to 350 degrees F - 175 degrees C
Core the apples.

This is a fabulous dessert for the Holidays! This one, however, isn't one of my own. But it is SINFULLY delicious! I make it this time of year..... along with the mandatory lefse - being from Norway it would be a kind of corrupt table without lefse - but that's another recipe!
INGREDIENTS5 cups thinly sliced peeled tart apples
1 1/4 cups sugar
1 cup fresh or frozen cranberries
3 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
1 cup water
2 tablespoons butter or margarine
TOPPING:
3/4 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup cold butter or margarine
1/4 cup milk
DIRECTIONSIn a large saucepan, combine the apples, sugar, cranberries, tapioca, cinnamon and water.

www.simplyrecipes.comI made this over the weekend and my husband and I both really liked it. I used ground pork instead of beef since that's what I had on hand and cut down on the salt a bit and it tasted great. It was yummy, economical (since it uses ground meat instead of a more expensive cut), and really fast to make.
