I spent last weekend at a Yard Sale, so my mother very nicely decided to make breakfast for all of us participating. Of course, she decided to do something fairly simple that she could make ahead of time - and ended up preparing this dish.
It was delicious!

This is what I made for dinner last night. It's something my mother has made for years and years. It's quick and easy and kind of a feel-good dinner.

My boyfriend makes these for dinner all the time. Even though I hate mushrooms, this is still one of my favorite meals he makes (I just don't eat the portabella part).
They're very easy but they take a while.
