Roasted Tomato Soup
From Bobby Flay
10 plum tomatoes, halved lengthwise, seeds removed
1/4 cup olive oil, divided
6 cloves garlic, coarsely chopped
Salt and freshly ground pepper
1 Spanish onion, diced
1 carrot, diced
3 cups vegetable stock
1 tablespoon finely chopped fresh thyme
1 1/2 cups heavy cream
Preheat oven to 325 degrees F.Place tomatoes in a large baking dish and drizzle with 2 tablespoons of the olive oil and sprinkle with the garlic, season with salt and pepper. Roast for 25 to 30 minutes, or until the tomatoes are soft.Heat the remaining olive oil in a medium stock pot over medium heat. Add the onions and carrots and cook until the onions are soft, about 5 minutes.Add the roasted tomatoes, garlic, and the juices that have accumulated.

Jay and Anna’s Chili
We love to play around with chili and flavors, especially when it's cold outside!
Feel free to add more beans if you like or substitute your preferred "hotness"!
If you prefer less heat, add only half of the spices, then adjust later.

foodnetwork.com3 cups 3/4-inch cubes of Italian bread (preferably whole wheat)
3 tablespoons olive oil
6 slices of lean bacon, chopped
3 pounds chicken breasts, poached (procedure above), skin and bones discarded, and the meat cut into bite-size pieces (about 4 cups)
1 pint cherry tomatoes, quartered
4 scallions, including the green part, minced
1/2 cup quick basil mayonnaise (recipe follows)
Basil sprigs for garnish if desired
In a bowl drizzle the bread cubes with the oil, tossing them to coat them evenly, and season them with salt. Spread the bread cubes in a jelly-roll pan, toast them in the middle of a preheated 350 degree oven for 15 to 20 minutes, or until they are golden, and let them cool. In a skillet cook the bacon over the moderate heat, stirring, until it is crisp and transfer it with a slotted spoon to paper towels to drain.

A French Mediterranean classic, this is a delicious and colorful tart full of punchy flavour. It took me 5 minutes to type all of this from my fave cookbook "Best Ever Vegetarian", I was so excited to share this recipe with you guys! Enjoy!
